Abstract: A comprehensive study was conducted to develop a stable heterogeneous biocatalyst based on immobilized glucoamylase and capable of continuous starch hydrolysis. The ceramics covered with catalytic fibrous carbon proved to be the optimal adsorbents and carriers for the immobilized enzyme. On these carriers glucoamylase stability was an order of magnitude higher than that of the enzyme solution. Immobilized glucoamylase retains its biocatalytic activity for at least one to one and a half year storage at room temperature. Analysis of enzymatic activity of developed heterogeneous biocatalysts in the flow reactors showed that diffusion was a limiting stage in starch hydrolysis. Several approaches were used to reduce diffusion limitations, including directed synthesis of the geometrically complex carriers with large transporting pores.
