Abstract:
Adsorption immobilization of invertase on the carbon-containing macrostructured ceramic carriers has comprehensively been studied in order to develop a stable heterogeneous biocatalyst for the continuous production of inverted sugar. A surface ceramic carbon layer with loose fibrous structure was found to have the optimal morphology for effective adsorption and stabilization of yeast invertase, whereas this enzyme is completely inactivated on the smooth graphite-like carbon layer. Kinetics of sugar inversion was compared in a dissolved and immobilized enzyme, as well as the Michaelis-Menten constants were estimated for both states. Kinetics of sugar conversion in solution was also studied in the flow bioreactors in the presence of developed biocatalysts of various geometrical shapes (granules, foam ceramics, honeycomb monolith).
